Sapere di vino
...

On Monday, November 24, 2025, the morning after Dolomiti & Adriatico, the focus shifted from the glass to a meaningful exchange among professionals. It was a moment of honest, practical dialogue—free of rhetoric—dedicated to those who produce wine, tell its story, and serve it every day. Opening the session, Director Ilaria Ippoliti immediately highlighted the key message: working as a team. Producers, schools, and the hospitality world are not separate spheres, but links in the same chain. When one grows, everyone grows. And when dialogue is missing, the whole system weakens. Among the industry professionals in attendance were also the students of the “Panzini” Hospitality Institute in Senigallia—the future faces of dining rooms, bars, and kitchens. A clear message: the future doesn’t wait; it is built. Simone Franceschi, editor of Il Sommelier (FISAR), captured the essence of the profession in three words: exchange, passion, emotion. Above all, he reinforced a simple yet often overlooked principle: a wine list must reflect pure identity. It should be built with method and intention—not assembled randomly or delegated to a distributor. The territory must play a central role, not a decorative one. Professor Simona Cicetti then addressed the opportunities and challenges of the “School–Work” program, now more crucial than ever in a sector that demands strong skills, professionalism, and awareness. The floor then went to those who truly live the dining room every day. Luigino Bruni, former professor at Panzini, described the waiter as an “emotional mediator”—someone who guides guests with expertise, sensitivity, and balance. This idea was echoed by Catia Uliassi of the three-Michelin-starred Uliassi, who spoke about the strength of a cohesive team built on balance and personal well-being. The numbers speak for themselves: 1,300 labels on the wine list, 300 of them from the Marche. A clear and intentional choice. From the Adriatic coast to the Tuscan Maremma, Maurizio Menichetti of Ristorante Caino, holder of two Michelin Stars for 28 years, emphasized the absolute importance of harmony between dining room and kitchen, and an almost obsessive attention to detail. The final reflection came from Walter Massa, who led the revival of Timorasso. With the clarity of someone who has walked the path for decades, he reminded us that meaningful results come from studying the best, practicing real sustainability, and building authentic partnerships between wineries and restaurants. Curious chefs, courageous sommeliers, and restaurateurs who truly value their territory, this is the recipe that, over thirty years, has made Derthona an international benchmark. A morning full of insight, clarity, and direction. Because wine does not live only in the glass, it lives in the choices we make, in education, and in the relationships we build.

Degustazione a due voci
...

Enhancing the value of Marche DOC and DOCG wines also begins with friendship among winegrowers. When we meet, listen to one another, and compare appellations, native grape varieties, and different soils, something special always happens: we all grow. And so does the understanding of our land. On Sunday, November 23, 2025, with Dolomiti & Adriatico, we brought that spirit into the glass. Eleven wineries from the Consorzio dei Vignaioli delle Marche and six from Trentino came together, seventeen families who grow and vinify only their own grapes. No shortcuts, no compromises: vineyards tended personally, thoughtful agronomic choices, and wines that speak honestly of the vintage. Two distant regions, Adriatic coast and Dolomites, united by the same vision of wine: artisanal, sincere, human. On one side, the rolling hills of the Marche and our historic appellations; on the other, altitude, dramatic temperature shifts, and the vertical elegance of Trentino wines. Not a challenge, but a conversation. Not a competition, but an exchange that enriches everyone involved. Together truly is better. Wine, after all, is not just a collection of aromas and flavors: it is a way of telling our story and discovering one another. That is why “Che vino sei?” (“What Wine Are You?”), the emotional tasting experience created by Laura Di Pietrantonio, made its debut at Dolomiti & Adriatico. A light, engaging journey that weaves together sensations, preferences, and personal traits, inviting participants to discover their own “wine profile” and approach wine with greater curiosity and awareness. Because recognizing yourself in a glass is often the first step toward truly understanding it. Alongside the winegrowers, three outstanding artisans of taste, Fontegranne, Pandefrà, and Carsetti, enriched the experience with flavors designed to dialogue with the wines, creating a journey that began in the Dolomites and reached the Adriatic, guided by skilled hands, meaningful stories, and distinct identities. The response spoke for itself: a full room, vibrant energy, smiles, and a genuine desire to listen and share. Many tastings, countless questions, authentic exchanges. The artisanal wines we love, told, tasted, and shared as they deserve. If there is one thing events like this remind us, it is that wine does not grow only in the vineyard, it grows through relationships. And when winegrowers build connections, the territory grows stronger. Always.

Celebrating the Human Side of Wine
...

It’s time to tell the story of wine in a different way - moving beyond technical jargon and tasting techniques to focus on the people. t’s time to tell the story of wine in a different way—moving beyond technical jargon and tasting techniques to focus on the people. Not just the producers and winemakers, but also those who work alongside them, helping to achieve their goals and bring their vision to life, whether in the market or at the winery. For both producers and the professionals who collaborate with them, sharing the human side of their work is becoming increasingly important. There’s more to the world of wine than vineyards, bottles, and production techniques. What truly makes the difference are the motivations that drive someone to become a winemaker or to collaborate with them. These stories bring authenticity and depth to the wine experience, creating a connection with consumers that transcends the product itself. To highlight these stories, we’ve launched a new video interview series, presented in bite-sized episodes. This format allows producers and their collaborators to share their personal motivations—like why they chose to work in the wine industry—or provide insights into what’s happening in their winery, such as during harvest season (captured in our “My Harvest” episodes). Our approach uses simple, direct, and jargon-free language, ensuring the stories are accessible to everyone. Whether you’re a wine enthusiast or simply curious about the authentic and sustainable world of artisanal winemakers like the Vignaioli delle Marche, these interviews are designed to inspire and connect with you on a personal level.
